Roasted Veggie Crustless Quiche | Recipes | Simple Natural Nutrition



This time of year calls for roasted sweet caramelized veggies! Here are 3 meal ideas for roasted veggies. Roast 2 pans of a variety of veggies cut up and tossed with a bit of olive oil, sea salt, and ground pepper. Example: broccoli, cauliflower, peppers, zucchini, garlic (cloves left in skin), onion, carrot. Whatever you have in your fridge. Roast in 400 degree oven for 30-45 minutes. You want to see the veggies begin to brown and caramelize.

3 Meal Ideas Using Roasted Veggies:

1. Roasted Veggie Crust-less Quiche (See recipe below).
2. Place roasted veggies on top of a mixed green salad for a quick and simple lunch or dinner with a prepared pesto and red wine vinegar dressing. Just use a tsp. or so of pesto and a splash of vinegar and whisk.
3. Roasted veggie wrap with red pepper hummus and greens. Some kalmata or black olives would be good in this as well. Spread the hummus on a whole-wheat wrap then place veggies, olives if using and mixed greens and any seasoning you like then wrap and enjoy!
